How to cook it
Split the head, cover with chopped chilli and steam for eight minutes, then finish with sizzling oil. It also braises well with yellow bean paste, or bakes in a clay pot with ginger, garlic and a splash of rice wine.
Storage
Keep frozen at -18°C for up to nine months. Thaw in the refrigerator for 8 to 12 hours and rinse before cooking.
